Make sure your iPhone and the TV/Apple TV are on the same Wi-Fi network. Many homes have a separate guest network — they don't talk to each other. Restart the TV's AirPlay receiver (Settings → AirPlay & HomeKit on Apple TV) if it's still missing.
Tap Screen Mirroring again, turn it off, then on. iOS occasionally keeps audio on the phone after a routing change. After turning mirroring back on, audio should follow the screen.
Drawing strokes render on the phone first, then mirror to the TV — the delay is the AirPlay link. If lag is severe, switch to 5 GHz Wi-Fi on the router, or move the iPhone closer to the access point. Apple TV connected by Ethernet is the smoothest setup.
